Stuffed Peppers w/ Turkey and Vegetables

Makes 4 Servings

Ingredients:

4 bell peppers: red, orange, yellow or green remove seeds and tops
1 lb. organic / grass fed lean ground turkey
2 tbsp. of grape seed oil
1/2 onion chopped
1 zucchini chopped
1/2 red bell pepper chopped
1/2 yellow bell pepper chopped
1 cup of fresh spinach
1 ( 14.5 oz ) can diced tomatoes drained
1 tbsp. of tomato paste

Italian seasonings to taste
crushed garlic to taste
ground pink salt to taste
ground black pepper to taste

Directions:

1. Preheat oven to 350 degrees
2. Wrap your desired bell pepper in aluminum foil and place in a baking dish. Bake 15 min. in the preheated oven. Remove from heat.
3. In a skillet over medium heat, cook the ground turkey until evenly browned and set aside. Heat grape seed oil in skillet and cook onion, zucchini, red pepper, yellow pepper and spinach until tender. Mix the turkey in with the cooked vegetables. Add the tomatoes, tomato paste and Italian seasoning, crushed garlic, salt and pepper.
4. Stuff the bell peppers with mixture.
5. Return stuffed peppers to oven and cook for 15 min. and enjoy!
