Lentil Soup ( Fakes )

Makes 4 Servings

Ingredients:
8 oz. of brown lentils
1/2 cup of olive oil
1 tbsp. of crushed garlic
1 onion chopped
1 large carrot
4 cups of vegetable broth
2 bay leaves
crushed dried rosemary to taste
turmeric to taste
cayenne pepper to taste
ground pink salt to taste
ground black pepper to taste
1 tbsp. tomato paste

Directions:
1. Put lentils in a saucepan, cover with 1 inch of water. Place over medium heat and bring to a boil; cook for 10 min. then drain lentils into a strainer and set aside.
2. In a medium saucepan, our in olive oil and place over medium heat. Add garlic, onion and carrot; cook and stir until the onion has softened and turned translucent, about 5 min.
3. Pour in lentils in the saucepan. Add vegetable broth, oregano, rosemary and bay leaves. Bring to a boil. Reduce heat to low, cover and simmer for 10 min.
4. Stir in tomato paste and season to taste with salt, pepper, cayenne and turmeric to taste. Cover and simmer until the lentils have softened, 30 – 40 min. stirring occasionally.
