Crab Cakes

Makes 4 Servings

Ingredients:

1 egg
3 tbsp. of mayonnaise
4 tbsp. of lemon juice
1/8 teasp. of red pepper flakes
1 teasp. of dried tarragon
1 tbsp. of minced green onions
8 oz. crabmeat
1/2 cup Italian seasoned dry bread crumbs
2 tbsp. of grape seed oil

Directions:

1.In a medium-mixing bowl, whisk together egg, mayonnaise, lemon juice, red pepper flakes, tarragon and scallions. Gently fold in crabmeat careful not to break it up. Gradually mix in breadcrumbs adding until desired consistency is achieved.

2.Heat grape seed oil in skillet over medium heat. Form mixture into patties and cook until golden brown.

3.Add dijon mustard on the side for a kick of spice!
