Black Bean Soup

This recipe is so quick, full of protein and yummy! Spice it up with the listed seasonings for flavor and heat or keep it simple. It’s up to you.

Ingredients:
Makes 4 servings

2 cans of black beans
1 onion chopped
2 cloves of garlic or 4 Tbsp of crushed garlic
1 red pepper chopped
1 orange pepper chopped
4 cups of vegetable broth

ground pink salt to taste
ground black pepper to taste
ground cumin to taste
turmeric to taste
chili powder to taste

Directions:

1. In a skillet sauté onion, peppers and garlic in a bit of olive oil over medium heat until tender.
2. In a medium saucepan mix beans, vegetable broth and sautéed vegetables over medium heat. Mix well and simmer while adding seasonings to your desired taste.
3. Pour soup into blender and puree. Return to saucepan and serve!
4. Add a dollop of sour cream, chives and a few tortilla strips for a yummy southwestern kick!
